This enzyme is especially responsible for metabolizing histamine, molecule present in a large number of foods and that can also be produced endogenously in our body, mainly, by intestinal bacteria.

Nevertheless, people with reduced DAO activity (CAD deficit) are prone to accumulate excess histamine in the blood, increasing the probability of presenting different symptoms, among which stands out migraine or headaches, in addition to nonspecific gastrointestinal symptoms (diarrhea, constipation, flatulence, abdominal pain,..) and others like rhinitis or dermatological symptoms. These adverse effects are known as histamine intolerance..
